- 1 chicken
(about 1.2 – 1.5kg)
- Cinnamon leaves 100 gr
- Fresh bamboo shoots 300 gr
- Abalone mushrooms 300 gr
- Lemongrass 2 plants
- Minced lemongrass 20 gr
- Minced onion and garlic 50 gr
- Green chili pepper 20 gr
- Grain salt 1 tbsp
- Lemon juice 2 tbsp
- Fresh vermicelli 100 gr

– You should choose bamboo shoots with a slightly rough shape, straight shape, not curved, fresh, thin skin, not wilted and have a characteristic aroma.
– You should not choose bamboo shoots that have a bad smell, the outer skin has an abnormal color such as too white or yellow-brown, the surface has spots, and the leaves are yellow and crushed because they can have an adverse effect on health.
How to choose for buying fresh abalone mushrooms
– You should choose mushrooms with large, long, hard bodies that will be more juicy than those with small bodies, with natural colors (white or gray mushrooms), the color is not too dark or too light.
– Delicious mushrooms are mushrooms that are intact, not crushed or broken, have a natural aroma, no bad smell.

Step 1: Preparing and marinating chicken
Buying a whole chicken, rub it all over with salt, then wash it with clean water and cut it into bite-sized pieces.
